Pop Zest Zucchini Fries & Avocado Aioli

Fries just got a lot healthier! These crispy-outside, tender-inside zucchini fries are delectable with creamy, herbaceous homemade avocado aioli.


Ingredients

For the Zucchini Fries

-1/3 cup Pop Zest Olive Oil & Herb

-4 zucchini

-1 egg

-1 cup gluten-free panko bread crumbs

-1 tsp + 1/8 tsp salt

-1 tsp smoked paprika

-1 tsp dried basil

-1 Tbsp Olive Oil

For the Avocado Aioli

-1 ripe avocado

-1/3-1/2 cup basil leaves (depending on how much you like basil!)

-1 clove garlic

-1 Tbsp lime juice

-1/2 tsp salt

-1/4 tsp pepper

-1 Tbsp plain, vegan yogurt


Instructions

For the Zucchini Fries

1) Preheat the oven to 425 Farenheit.

2) Wash and slice the zuccini into strips 2" long and 1/4-1/2" thick.

3) In one bowl whisk egg with 1/8 tsp salt until well combined. In another bowl, pour in Pop Zest Olive Oil & Herb Superfood Topping. In a third bowl, mix together the bread crumbs, remaining tsp salt, paprika & basil.

4) Take your zucchini slices and dip them one by one in the Pop Zest, egg mixture and then breadcrumb blend, and place them on a parchment paper lined sheet. Once each zucchini fry has been coated and is on the sheet, place in the oven and bake for 20 to 25 minutes. The fries are done when the coating is brown and crispy.

For the Avocado Aioli

1) While the fries are baking, make the aioli in a food processor or blender by adding all ingredients and then blending until smooth.
