General Zest's Asian Riced Cauliflower

This recipe infuses cauliflower, peas and corn with a savory and sweet simmer sauce that is sure to please!


For the Cauliflower & Veggie Medley

-3 Tbsp Olive Oil & Herb Pop Zest

(reserve 1 Tbsp to garnish dish)

-2 Tbsp avocado oil

-2 cups riced cauliflower

-1 cup frozen peas

-1/2 cup frozen corn

-1/2 cup chopped red pepper

-1/4 cup chopped spring onion

Simmer Sauce

-2 Tbsp Tamari soy sauce

-2 Tbsp sesame oil

-1 Tbsp rice wine vinegar

-1 Tbsp fresh grated ginger

-1 tsp minced garlic

-1/4 tsp pepper

-1/4 tsp sea salt


1) Heat avocado oil in a skillet. Add riced cauliflower and saute 6-8 minutes until soft. Add peas, corn, red pepper and spring onions. Cook another 6-8 minutes or until caramelized to your liking.

2) In a small bowl stir 2 Tbsp Pop Zest, Tamari, sesame oil, rice wine vinegar, ginger, garlic, salt and pepper together. Add to cauliflower mixture and simmer 3-5 minutes until cooked through.

3) Sprinkle remaining 1 Tbsp of Pop Zest over the dish before serving.
